Herb Salad

From Einat Admony's "Shuk"

Method

Make sure your herbs and greens have been thoroughly washed and totally dried in a salad spinner. Pile them all into a bowl along with the chilli rings and lemon peel.

Squeeze on 1 tbsp of lemon juice, season with salt and pepper, and drizzle on about 3 tbsp olive oil. Toss to distribute the oil and seasoning, taste, and adjust with more salt, pepper, lemon juice or oil until the salad is bright and refreshing.
