Pour the oil into a mug or jar, and then add the vinegar to make up a ratio of two thirds oil, one third vinegar. The key to this dressing is that it’s quite sharp - don’t be afraid of the vinegar!
Add a generous dollop of mustard - if the dressing is for 2 of you, a teaspoon is probably about right.
Season generously with lots of salt and pepper, then whisk with a fork until it’s all combined. One of those electric frothers makes it particularly nice and creamy if you have one!
