Raw Courgette, Olive & Caper Salad

Method

Thinly slice the courgettes length ways using a potato peeler, and put in a serving dish.

Half the olives and chop the dill, then add to the courgettes alongside the capers.

Drizzle with olive oil and lemon juice to your taste, and season generously with pepper (it should already be quite salty from the capers), then toss.

Sprinkle over the pine nuts and if using, finish with the shaved parmesan, then serve.
