Put the mayonnaise, lemon juice and tarragon (if using) in a bowl, mix and season well. Add in the crab and avocado.
Cut the rolls in half, and spread with the butter. Fry butter-side down in a frying pan over a medium heat until golden.
Fill with the salad and the crab mix and then finish with a pinch of cayenne pepper.
