James' Chicken Burgers

Method

Preheat the oven to 200°C. Mix all of the rub ingredients together in one bowl. Add the chicken to the bowl and coat well. Shake off any excess before dipping into the egg, followed by the bread crumbs. Place the chicken on a baking tray, ideally on a rack (this way it is crispy on the bottom and you don't really need to flip). Cook for roughly 15 minutes or until crispy. The chicken is so thin that it takes no time at all!

For the guacamole, mix all the ingredients together. It is that easy and you can go big on the elements you like!

Toast your bun for one minute before the chicken is done.

To assemble, add mayo and then lettuce to the base of the bun. This will stop the chicken from making the bun soggy. Then goes the chicken followed by a big dollop of guac and hot sauce if you want.
