Strawberry, basil and gin cocktail

Method

Blitz the strawberries and basil in a food processer (you may need to add a couple of teaspoons of water if it is too thick). Put the liquid through a sieve to give the cocktail a clean pinky colour. You should have plenty of this for multiple cocktails.

Add the gin, lime, agave syrup and 50ml of the strawberry mixture to a cocktail shaker and stir.

Pour in a glass full of crushed ice and top up with sparking water. Serve with a slice of strawberry.
