Blitz the mint and cucumber in a food processer. Put the liquid through a sieve to give the cocktail a clean green colour. You should have plenty of this for multiple cocktails.
Add the gin, lime, agave syrup and 50ml of the cucumber and mint mixture to a cocktail shaker and stir. Do not add ice as the cucumber will water it down instead.
Pour in a glass full of ice and serve with a sprig of mint.
