Method

Heat 3 tablespoons of oil over a medium heat, and add the garlic, stirring frequently until softened, about 4 mins. Add the chilli and cook for another minute or 2, then add the tomato paste, stirring frequently until it begins to darken, about 5 mins. Add a splash of vodka and stir to deglaze the pan, then take off the heat.

Bring a large pan of salted water to the boil and add the penne, cooking according to instructions for al denté. Reserve some pasta water before draining.

Return the sauce to a low heat, add a splash of pasta water and the double cream, then stir to combine. Add half the Parmesan and stir until melted. Turn off the heat and add in the pasta and parsley, and stir to combine. Fold in the remaining Parmesan, adding more pasta water if you need to loosen it, then season with salt and plenty of pepper, then serve.
