Place lamb chops in a shallow dish. Mix all ingredients from first marinade. Rub marinade over chops, cover + refrigate for 2 hours
Prepare 2nd marinade. Warm frying pan over a medium heat. Add cumin and coriander seeds along with the clove and toast for 2 minutes. Tip into mortar and peste and leave to cool.
Blitz all the other marinade ingredients to a paste with blender.
Grind cooled toasted spices to a coarse powder and add to a paste
Take chops out of fridge and coat with 2nd marinade. Leave to refrigerate for 24 hours.
Heat grill to high. Toss chops again to evenly coat. Place on a foil lined baking tray and brush with melted unsalted butter
Turn over and brush with butter. Grill for further 2-3 minutes. Repeat until nicely caramelised
Allow chops to rest for 3 minutes
