Cod in Tamarind and Fenugreek Sauce

Method

Start by warming through the olive oil in a large pan. Fry your onion for about 5 mins, until it becomes translucent. Then add in the flour and stir through

Add in the garlic slivers, turmeric, fenugreek seeds, cayenne pepper and sugar- stir for about 2 mins.

Then add in the coriander and cook through until the coriander begins to soften.

Now dissolved your tamarind paste in warm water and pour this into the pan. Cover the plan and simmer for about 15mins until the sauce thickens.

After the 15 mins passes, cut your cod loin into smaller pieces and place into the pan. Spoon a bit of sauce cover the fish, cover the pan and cook for a further 15 mins.

Your delicious fish is now done - I recommend serving this with brown rice
